One of my favorite cuisines is Peruvian because of the bright, fresh, and bold flavors they use. In particular, I am obsessed with the famous bright green sauce you can find in many Peruvian restaurants. It is commonly served alongside steak, seafood, veggies, and more. A few years ago, I tried recreating it, adding a bit of an Ale twist, and the result was one of the most delicious and easy-to-make sauces that everyone in my family goes crazy for.
It’s fresh from the cilantro, lime and basil (my twist), and spicy from the jalapeño, Serrano and ginger (another twist). Enjoy the sauce as a dip for chips, salad dressing, marinate and sauce for steak/chicken/fish and the list goes on….

Ají Verde Sauce
Ingredients:
1 bunch cilantro
1/4 cup fresh basil leaves
2 cloves garlic
1/2 inch of ginger, peeled and chopped
4 green onions, roughly chopped
1 jalapeño, deseeded and roughly chopped
1 Serrano, roughly chopped
2 limes, juiced
1/3 cup olive oil
1/2 cup Mayo
3 tbsp parmigiano cheese
Steps:
1) Add all but the last two ingredients into a blender or food processor. Pulse to chop.
2) Add in the mayo and parmigiano cheese. Blend for 2-3 minutes, scraping down the sides as necessary, until evenly smooth and blended.
Store in an airtight container in the fridge for up to a week.
