Truth be told, I am not a hot dog girlie 😅 (I think it’s PTSD of working a water-boiled hot dog stand as a kid at a festival.) So, typically, if I have the choice between a hot dog or a burger, I’ll always go for a burger. HOWEVER, I have one exception: a fun topped “hot dog,” such as these Banh Mi dogs.
Because who said that you can’t have a little fun with building hot dogs?!!
We’ve got quick pickled carrots and cucumbers, garlicky spicy mayo, crushed peanuts, sliced jalapeños, fresh cilantro, and drum roll……applewood smoked chicken sausage!!! Swapping that classic glizzy for a simple, clean ingredient sausage was such a great swap here for a better for you sandwich (and side note, I need responses on this poll below because I’d like to settle it.)

Bahn Mi Inspired Chicken Sausage Dogs
Ingredients & Garnish:
1 package Applewood Smoked chicken sausage (or your fav hot dog or sausage brand)
4 brioche hot dog buns or dinner rolls sliced down the middle
Fresh Cilantro, for garnish
Jalapeño, thinly sliced
Crushed peanuts
Quick Pickled Cucumbers and Carrots:
1 small English cucumber, julienned
1 small carrot, julienned
1/4 cup apple cider vinegar
1 tsp sugar
1/2 tsp salt
1/4 cup water
Spicy Mayo :
1/2 cup mayo
1-2 tbsp sriracha, to preference
1 clove garlic, grated
Steps:
Begin by slicing the carrots and cucumbers. Heat the vinegar, salt, and sugar in a small pot or in the microwave until dissolved. Pour over the carrots and cucumbers, and then add the water. Set aside.
In a small bowl, combine all of the mayo ingredients. Whisk together all, taste, and adjust to your preferences.
Heat a medium-sized skillet or grill over medium heat. Add a small drizzle of oil and begin cooking the sausages for about 4 minutes per side or according to the package description.
Place the buns in a toaster or the oven for a few minutes to warm up. Prepare the remaining toppings or jalapeño, peanuts, and cilantro.
To assemble, add the sausage to the bun, add some pickled carrot and cucumber, and jalapeño no slices, then drizzle with the mayo sauce and finish with the peanuts and cilantro.
