The other day, after dinner, I was craving something sweet. Sitting on the couch, staring at the apples in the basket I still had left over from apple picking, I thought, WHAT IF I could make something simple using a whole apple as a base?
After some testing and exploring, I settled on these individual apple crisps. I hollowed out an apple to form a bowl and stuffed it with a quick apple compote and an oat crumble. Then I popped it into the oven for about 10 minutes and out came this perfect single-serving dessert with everything you love about an apple pie or crisp dessert.
Now, I will say that as much as I love making this just for myself, I think it would also be a great addition to a holiday dinner party. You can prep it all in advance and just pop the apples into the oven 15 minutes before serving!!!

Individual Apple Crisp
(2 servings)
Ingredients:
3 large apples, 1 small diced + 2 to be used as a vessel (like Honeycrisp or Empire)
1 tbsp brown sugar
1/2 tsp cinnamon
1 tsp lemon juice
Vanilla Ice Cream & Caramel Syrup, for Garnish
Crumble Ingredients:
1/4 cup AP flour
1/4 cup rolled oats
1 tbsp brown sugar
1/2 tsp salt
1/1 tsp cinnamon
2 tbsp cold butter, cubed
Steps:
Preheat the oven to 400 F.
In a small sauce pot, combine the diced apple (should be about 2 cups), sugar, cinnamon, and lemon juice over medium heat. Cook, stirring frequently, until the apples have just softened and become slightly jammy, about 8-10 minutes.
In the meantime, make the crumble. Combine the flour, oats, sugar, salt, and cinnamon in a small bowl. Add in the cubed butter and use your fingers to break up the butter and incorpate it in. The mixture should be crumbly but stay put when squeezed together.
Prepare the apple “bowls” by slicing the top of the apple horizontally, just at the point where the stem is completely removed. Use a spoon to carefully remove the center flesh of the apple, making sure to leave a 1/2-inch border around the entire circumference.
Fill each apple with half of the sauteed apples and half of the crumbs. Make sure to press in the crumbs so that they stay in place. It should resemble a muffin top.
Place the filled apples on a tray and bake for 10-15 minutes, or until the top is golden brown and the sides have softened.
Allow the apples to cool slightly, then serve with vanilla ice cream and caramel syrup.
