Hellloooooo and Happy Monday!! I definitely owe you guys a bit of an update on life because it has been a CRAZY month for me. And while I know at least 25% of you care about that, I will share that later in the week and leave the spotlight for today on this incredible one-pan chicken dinner…
Chicken Thighs
Rosemary
Orzo
Sun dried tomatoes
Burrata
Parmigiano
These are some of the star ingredients, and I mean given that list alone, I am salivating all over again (are you?!)
Let’s just get into the recipe already:
One-Pan Chicken Thighs with Orzo, Sun-dried Tomatoes, & Burrata
Ingredients:
4 bone-in, skin-on chicken thighs
1 tbsp fresh rosemary, finely chopped
1 1/2 tsp kosher salt
1 tsp garlic powder
black pepper
2 tbsp olive oil
1 shallot, finely chopped
3 cloves garlic, finely chopped
1/4 cup sundried tomatoes (in oil), cut in strips
1/2 pound orzo
1/3 cup white wine
3 - 3 1/2 cups chicken broth
1/2 cup grated parmigiano
1 small burrata
Fresh basil
